Origin Grapes from 'Ravera', a famous MGA located in the commune of Novello
Climate Ravera di Novello is a fabulous hillside with west/south-west exposure, at an altitude of about 400 m above sea level.
Soil composition The soil is calcareous-clayey with the presence of Marne di Sant'Agata.
Plants per hectare 4500
Wine making Alcoholic fermentation lasts about 3 weeks in steel vats in contact with the skins with regular pumping over. This time includes pre- and post-fermentation cold maceration using the traditional submerged cap method. Slow malolactic fermentation in casks, where the wine remains more than two years on the lees, without racking.
Aging Matured for about 30 months in large casks.
