What kind of wine it is
Barolo Cerequio by Vietti is a still red wine made from Nebbiolo grapes, a distinguished expression of the Barolo region. On the nose, it offers notes of ripe red fruits, delicate spices and hints of violet. On the palate, an imposing yet extremely refined tannic structure emerges, supporting an enveloping sip dominated by clear hints of plum, cherry and strawberry. The tasting concludes with a long and persistent finish, enhanced by refreshing balsamic nuances and a delicate savoury minerality.
Where it comes from
The grapes come from the Cerequio vineyard, one of the most prestigious crus in the Barolo commune. The old vines, managed with sustainable farming practices, benefit from a southern exposure at around three hundred and twenty metres above sea level. The roots delve into a calcareous-clay soil characterised by the presence of the marls of Sant’Agata, a geological matrix essential for imparting the typical austere structure to the palate. These ideal soil and climate conditions ensure perfect ripening, resulting in a pronounced aromatic complexity.
How it is produced
After manual harvesting and gentle pressing, fermentation takes place in steel vats in contact with the skins for three weeks. Phenolic extraction is optimised using the submerged cap method. Malolactic fermentation occurs directly in wood, initiating an ageing process of about thirty months in large Slovenian oak casks, complemented by small amounts of French oak. True to its artisanal approach, this vegan wine is bottled without filtration, preserving its natural integrity.
