What kind of wine it is
Valdo's Paradise Rosé Brut is a fresh sparkling rosé, created from a careful blend of Glera and Nerello Mascalese grapes. Characterised by a fine and persistent perlage, it offers clear aromas of wild strawberries, raspberry, peony and acacia flowers. On the palate, it is soft and dry, supported by a lively acidity that ensures a pleasantly refreshing finish. Ideal as an elegant aperitif, it pairs harmoniously with shellfish, lean fish and delicate risottos.
Where it comes from
The grapes used come from very different pedoclimatic contexts. The Glera grows in Veneto, at altitudes between 100 and 300 metres, on calcareous and clay soils that promote excellent freshness and a clear aromatic definition. The Sicilian Nerello Mascalese, on the other hand, gives the wine the right structure. This territorial combination fully reflects Valdo's expertise in quality Italian sparkling wine production.
How it is produced
The harvest takes place in the first half of September. The process involves a gentle pressing of the black grapes, carried out without skin maceration to ensure maximum olfactory purity and a delicate colour tone. After fermentation at a controlled temperature, the prise de mousse takes place using the Charmat Method in stainless steel tanks for three or four months. A careful ageing in the bottle finally stabilises the balance between the fruity component and the effervescence.
