Ottagono Nero di Troia Castel del Monte Riserva by Torrevento is a robust and characterful red wine from Apulia. Made entirely from Nero di Troia grapes, it faithfully reflects the identity of Castel del Monte through its intense aromatic profile. On the palate, it is warm and juicy, supported by a dense and balanced structure. Visually, it stands out for its deep ruby colour enriched with violet highlights. It is the perfect companion for grilled red meats, flavourful roasts, game, and well-aged cheeses.
Where it comes from
The vineyards are located on the northern Murge plateau, in the area of Corato. The vines grow at the foot of Castel del Monte, between the Torre del Vento district and the Piana di San Giuseppe, at an altitude of around 480 metres. The calcareous and rocky soils, poor and marked by karst phenomena, encourage the roots to grow deep. The warm Mediterranean climate, refreshed by sea breezes, ensures excellent ripening, while the espalier training system contributes to a dense and savoury flavour profile.
How it is produced
The slightly late harvest begins in November to maximise the aromatic concentration of the grapes. Fermentation takes place in cement vats with a long maceration on the skins for balanced extraction. The wine then matures for eight months in cement and twelve months in large oak barrels, before completing its ageing in the bottle. This process develops a complex bouquet of blackberry, wild thyme, liquorice, and red fruits. On the palate, it reveals fleshiness and harmony, finishing with a long spicy aftertaste. It is recommended to let it breathe for at least an hour before serving.

Vineyards are only grown with autochthonous vines, following the dictates of sustainable agriculture. At the winery, the production method follows a non-excessively long maceration time and a non-excessive use of wood. Francesco Liantonio has been at the helm; there have been many interventions: the expansion of the vineyard area, investments in technology and innovation and the start of the process for quality certification.
