What kind of wine it is
The Etna Bianco Superiore Salice by Terre Nere is a still white wine that expresses the authentic soul of the Carricante grape variety. In the glass, it displays a straw yellow colour with golden highlights, revealing a complex aromatic profile characterised by floral and spicy notes. On the palate, it boasts an intense structure, supported by a vibrant freshness and a crisp acidity reminiscent of citrus fruits and green apple. The pronounced mineral imprint leads the tasting towards a persistent finish. This wine pairs beautifully with refined seafood dishes, vegetarian recipes and mature cheeses, also demonstrating an excellent aptitude for ageing.
Where it comes from
The grapes are grown in Sicily, at an altitude between 600 and 900 metres, in the Etna territories of Randazzo, Castiglione di Sicilia, Biancavilla and Milo. The vines sink their roots into volcanic soils that give the sip a distinctive savoury tension. The viticulture follows the alberello system, an ideal technique to ensure limited yields and optimal aromatic ripening. The Terre Nere winery operates in accordance with strict organic practices, safeguarding the balance of the volcano's ecosystem to faithfully transfer the essence of the territory into every glass.
How it is produced
Following the October harvest, the bunches undergo a brief cold maceration, followed by gentle pressing and static decantation to preserve the integrity of the aromas. Alcoholic fermentation takes place in French oak barrels, preceding the malolactic fermentation, which brings roundness and balance. The wine then matures in French oak barrels for ten months, with a further resting period of eight months. This careful production process enhances its finesse and complexity, defining an elegant structure and a pleasant freshness.
