Description
Cuvee Brut is a sparkling white wine produced in Randazzo (CT), Sicily, by the Terrazze dell'Etna winery. This sparkling white wine is made from a single-variety Chardonnay grape variety, one of the oldest grape varieties in Italy and also one of the most widely cultivated in the world. The medium-sized, cylindrical bunches of grapes are small, with thin, waxy skins and a green-yellow color. The Terrazze dell'Etna estate extends over an area ranging from 650 to 850 meters above sea level. The soil, closely linked to the volcanic matrix, is rich in microelements such as iron and copper, and moderately rich in potassium, phosphorus, and magnesium. Furthermore, the cool, breezy climate with significant temperature variations between day and night gives the wine its distinctive organoleptic characteristics. Following the manual harvest, which begins in the first 10 days of September to preserve the acidity and thus potential freshness, the white vinification process begins. After being transferred to the cellar, the grapes are destemmed to separate the berries from the stalks and pressed. This is followed by alcoholic fermentation, the key process in winemaking, as it transforms sugars into alcohol. The aging phase involves further fermentation in the bottle with the addition of selected yeasts, for a minimum of 3 years.

Ancient head-trained vines over 60 years old give life to Cirneco: Etna Rosso, whose name is a tribute to the volcano's native hunting dog, which possesses the wine's equal characteristics in terms of elegance and strength.
The younger vines give birth to Carusu, a young Etna Doc that retraces the history of Etna reds in a modern key, Rosato Etna Doc with its pinky hues, and Ciuri, an elegant and unique wine, originated from the white vinification of Nerello Mascalese.
From the Carricante vineyards comes Cinniri, a Bianco Etna DOC that, as the name indicates, brings the typical flavours of the volcano back into the glass.
The international grape varieties give rise to four Metodo Classico sparkling wines (two that remain 36 months on the lees and two that remain 50 months) and two IGT Sicilia red wines. Read more
