Sumarè Rosato Brut by Tenute Rubino is an elegant sparkling wine made using the Traditional Method that fully expresses the character of Susumaniello. In the glass, it displays a bright salmon pink hue, enlivened by a very fine and persistent perlage. The bouquet offers delicate floral and fruity notes, enriched over time by elegant spicy and fragrant hints. Where does it come from
This sparkling wine originates in Apulia, in the renowned Jaddico-Giancòla area near Brindisi. The vineyards stretch almost at sea level, with roots sinking into sandy soil that imparts a deep mineral tension to the grapes. The rows are trained using the spur-pruned cordon system, ensuring perfect agronomic balance with controlled yields. The rigorous manual harvest takes place at the beginning of September, with the bunches placed in small crates to preserve their complete integrity. This meticulous care in the vineyard allows the native grape variety to reveal its excellent natural aptitude for sparkling wine production.
How is it produced
The vinification process begins with primary fermentation in stainless steel tanks at a controlled temperature. The base wine then undergoes slow refermentation in the bottle according to the rules of the Traditional Method. Maturation involves a long ageing on the lees for at least forty-two months, a key stage that enhances aromatic complexity and refines the texture of the sip. The final result is a Brut dosage that respects the original freshness of the fruit, delivering a wine that is both satisfying to drink and technically precise.

After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
