Oltremè by Tenute Rubino is a still red wine that expresses the authentic character of Susumaniello. Produced in the Brindisi area, it stands out for its savoury and mineral sip. The tasting ends with a long, spicy finish, making it ideal for pairing with flavourful dishes such as orecchiette with tomato, roast meats and medium-aged cheeses.
Where it comes from
The grapes come from the Jaddico-Giancòla vineyards in Brindisi, located at sea level. The vines grow on sandy and calcareous soils, essential for giving the wine a rounded taste while maintaining a clear texture. The influence of the coastal microclimate promotes regular ripening, supporting the aromatic definition of the fruit. The entire vineyard is managed through strict organic farming, with balanced yields that maximise the expressive intensity of the harvest.
How it is produced
After a manual harvest at the beginning of October, the must undergoes a ten-day maceration in stainless steel tanks to extract colour. Malolactic fermentation helps to soften the flavour profile. The process continues with ageing in steel followed by a final maturation period. The result is an intense ruby glass that releases aromas of cherry, pomegranate and plum, enhanced by elegant balsamic nuances, cinnamon and hazelnut.

After all, winemaking is an ancient art here in Jaddico: over the years, archaeologists have brought to light a Roman manor house filled with kilns, where Visellio—the owner of the estate—fired the amphorae used to export his wine to the four corners of the Roman Empire. At the time, this land was home to extensive vineyards and served as an important manufacturing center for wine containers.
