Where it comes from
The grapes ripen among the picturesque rolling hills of the Belìce Valley, near Gibellina, at an altitude between 350 and 500 metres. In this area, the dry microclimate favours optimal ripening of the bunches, preserving the natural freshness of the variety. The vines sink their roots into a white soil of medium compactness, a soil rich in limestone and gypsum that ensures excellent water retention. These geological characteristics give the wine a distinct mineral character, faithfully reflecting the vocation of the territory.
How it is produced
The manual harvest takes place between the beginning and the middle of September, selecting the best bunches for gentle pressing, which is essential to maintain the aromatic integrity. The must undergoes temperature-controlled fermentation in steel containers, where it matures for three months, followed by a further period of rest. The result is a wine with a bright straw yellow colour with greenish reflections and a fruity bouquet with notes of peach, almond and orange blossom. On the palate, the structure is defined by a pleasant harmonious savouriness, excellent for accompanying light fried foods and grilled fish.
