Taurasi Riserva Gulielmus by Tenute Capaldo, a still red wine with a controlled and guaranteed designation of origin, enhances the peculiarities of the Aglianico grape variety from Campania. In the glass, it presents a ruby red colour, a prelude to an olfactory profile characterised by red fruits and clear balsamic and mineral notes. On the palate, it reveals itself as full-bodied and persistent, supported by vigorous tannins forged by fermentation in stainless steel tanks and ageing in barrels. Its defined structure makes it ideal for pairing with mature cheeses, game, and stewed red meats, preferably after decanting.

Where it comes from

The grapes are grown in a two-hectare plot in the Baiano district, in the territory of Castelfranci. The vineyards, located between 350 and 380 metres above sea level with a southern exposure, rest on clay-loam soil that gives the wine a solid structure. The project stands out for the use of buds taken from ancient pre-phylloxera vineyards trained using the Guyot method. The name of this Taurasi Riserva is inspired by the Goleto Abbey founded by Saint William, a profound tribute to Campania's historical heritage.

How it is produced

The production process begins with a meticulous manual harvest between mid-October and early November, aimed at preserving the aromatic concentration. Vinification takes place in stainless steel tanks to keep the varietal characteristics of the Aglianico grape intact. Subsequently, the wine undertakes a long maturation process, resting for 18-24 months in oak barrels. The cycle concludes with bottle ageing for over two years, a fundamental period for harmonising the tannic texture and reaching a perfect balance.
