Located in the Roero region, near Alba in Piedmont, the ancient Sibona distillery has been producing the exclusive Grappa Riserva Botti da Sherry for years. This spirit is part of a prestigious collection of specially aged grappas and represents its first major success. This unique amber liqueur is born from the company's passion for the art of aging grappa through the use of various barrels, which continually enhance the classic spirit's flavors and aromas. The barrels used for this precious version of Grappa Riserva Botti da Sherry come from Spain, where they have long been used by one of the most prestigious wineries to elevate the fortified Sherry wine. The grapes used to make this extra-aged grappa come from a premium Barbera grape variety. The grapes, grown in the heart of the Langhe, come from vineyards belonging to two excellent DOCs: Barbera d'Asti and Alba. Only the pomace is distilled to make the grappa. Once fermentation is complete, it is distilled using traditional copper stills. The artisanal production of the liqueur continues with the aging process, which involves two phases. During the first phase, the distillate rests for a long time, a full 18 months, in oak barrels. The meticulous refinement then continues with the phase in Sherry barrels: this lasts 12 months, during which the grappa takes on the captivating aromas typical of the famous Spanish wine.

From its origins, Sibona distillery has handcrafted its “grappas” from single vine varieties. The distillation process consists of vapour production from fresh marc soon after it arrives in the distillery. Originally, distillation was carried out by means of an old locomotive, which, in time, gave way to copper alembics. Marc is distilled no sooner it arrives in the distillery, which allows the extraction of the grape’s full aroma. Recently, the distillation of Muscat, Hamburg Muscat and pink Muscat grapes, immediately after fermentation, has given origin to a spirit called “Distillato Uva” (named UvediLanga by licence). This distillate has been acclaimed by connoisseurs for its excellent quality and organoleptic characteristics.
Besides the selection of the best marc of the zone, Sibona’s grappas reach high quality levels thanks to accurate distillation, constant updating and improvement of the equipment, the experience of two oenologists who have been working in distillation for years, the elimination of the first and last portions of the distillates, and last, but not least, a long ageing period in barrels, which renders the grappas not only soft and pleasant but also more complex and aromatised.
