Description
What kind of wine it is
Tardivo ma non Tardo by Santa Barbara is a white wine that expresses the character of the Verdicchio grape with noble elegance. On the nose, it reveals a layered bouquet, characterised by intense tropical fruit aromas, enveloping exotic notes and spicy nuances, enhanced by hints of nuts. On the palate, it stands out for its deep and savoury structure, made dynamic by a pleasant fresh vein. The sip finishes with a typical slightly bitter aftertaste, offering an inviting persistence.
Where it comes from
The grapes are grown on the hills of the Marche region, in the heart of the historic Verdicchio dei Castelli di Jesi Classico Riserva area. The vineyards are located at around 260 metres above sea level, with a favourable north-west exposure. The vines grow on clay-rich soil, which is essential for giving the wine a pronounced minerality and a structured flavour profile. The meticulous manual management of the vineyards ensures healthy, intact bunches, capable of expressing the true vocation of this territory.
How it is produced
The winemaking process is aimed at preserving the aromatic integrity of the fruit. The must ferments in steel tanks at a controlled temperature. Afterwards, the wine undergoes a long ageing on fine lees for two years, a key technical choice to enrich its volume and complexity. Before being released on the market, a further six months of rest allows it to achieve impeccable balance, harmonising the lively freshness with the material density of the sip.
History and Curiosities
The Tardivo Ma Non Tardo 2021 combines the excellence of Verdicchio dei Castelli di Jesi with art and social commitment. This renowned wine is enhanced by an artist's label, created exclusively by the famous restaurateur Catia Uliassi. In addition to boasting prestigious awards, such as the 2 Glasses from Gambero Rosso, the project stands out for its noble charitable vocation: part of the proceeds supports the Dante Paladini Foundation Onlus, concretely funding medical research and assistance for patients suffering from neuromuscular diseases.
