What kind of wine it is
San Felice Vin Santo Chianti Classico Belcaro is a dessert wine that faithfully embodies the character of the Vin Santo area of Chianti Classico. It displays a bright amber hue, introducing an intense aromatic profile characterised by notes of almond, apricot, honey and a delicate spiciness. On the palate, its structure stands out for a measured sweetness, perfectly balanced by lively freshness. This balance ensures a clean and persistent sip, ideal for ending a meal with utmost elegance.
Where it comes from
The vineyards of the San Felice estate are located in Castelnuovo Berardenga, in the Sienese area of the Chianti Classico region. The vines are cultivated using the Guyot method on medium-textured soils rich in stones. The soil is notable for its high content of calcareous-marly clays, resulting from the disintegration of Alberese and Galestro rocks, typical of the Monte Morello formation. This distinctive geological composition gives the wine an orderly structure and supports its natural acidity, preserving its vitality over time.
How it is produced
Production begins in October with the grape harvest, followed by meticulous drying on racks that continues until December. After gentle pressing, the dense, concentrated must undergoes a slow fermentation. The entire process, including ageing, takes place for at least five years in small oak barrels, the traditional caratelli, which define its complexity. The result is a wine of great harmony, perfect for pairing with cantucci and small pastries, in keeping with the most authentic Tuscan gastronomic tradition.
