Where does it come from
The geographical origin defines the character of this wine, cultivated in Mareuil-sur-Ay. The grapes come from a specific Premier Cru vineyard called Chemin du Bois, located at the base of a slope to benefit from optimal soil and climate conditions. The chalky-clay soil of the area gives the sparkling wine a linear and taut character, perfectly balancing the softness of the sip. This location enhances the authentic nature of the Pinot Noir, delivering a clear territorial profile and a solid structure during tasting.
How is it produced
Vinification follows the Traditional Method according to Pouillon's production philosophy. Fermentation takes place thanks to the action of indigenous yeasts. The wine is then aged for a period ranging from six to eighteen months in oak barrels of varying ages, using the bâtonnage technique. The prise de mousse is followed by prolonged maturation in bottle on the pupitres for around five years. The result is a genuine Extra-Brut with a dry palate, capable of preserving an extremely fine mousse.

This 2018 vintage Blanc de Noirs originates from an exclusive Premier Cru parcel in Mareuil-sur-Ay, revealing the purest essence of Pinot Noir. Fermented with indigenous yeasts and without added sulphites, it matures in fine oak barrels before ageing on the lees in bottle for five years. The result is an elegant Champagne Brut Nature with an extremely fine perlage, capable of enveloping the palate with an extraordinarily creamy and light texture. Delicate aromas of brioche and flowers blend harmoniously into a crisp, savoury and persistent finish.

In 1964, James (Roger and Bernadette's only child) started working with his father while developing his knowledge as a winemaker. He was joined a year later by his wife, Josette, born in Champagne as well.
As Recoltant-Manipultant, the Poullons own their own press and do not work in a coop. The control every step of the process, from the vine to the bottle.
After the death of Roger Poullon in 1993, and his spouse 2 years later, Fabrice (James's yougest son) joins the family business and bring with him his background in viticulture, oenology and marketing. His wife Elodie follow in 2000 to help on the marketing side.
As a young winemaker, James modernized the operation with the use of enamelled vats, hydraulic tractors and gyropaletts. Later, Fabrice introduced sustainable agriculture and started to export Roger Pouillon Champagne to the US, Japan, United Arab Emirates, Italy, Belgium, Canada, Australia and UK. Read more
