Wine making | Grapes are first selected and dried in plateaux for 2 months. The grapes are destemmed, pressed and vinified with délestage followed by alcoholic and malolactic fermentation for 15 days in vertical stainless steel vats. |
Aging | The wine is left to rest for 2 years in Allier tonneaux and barriques and blended for the final year in 20-hectolitre Allier oak barrels. A year of bottle ageing follows before marketing. |
