Description
Sarpa Oro is one of the grappas from the Poli distillery. Veneto is the most famous region for grape marc spirits, and Sarpa Oro is produced in the heart of this area, in Schiavon—not far from Bassano del Grappa. For its spirits, the Veneto-based company pays close attention to raw materials and production processes. The grape marc from which their grappas are made grows between Bassano del Grappa, Marostica, and Breganze, lands that have always been rich in vines. The company's main credo is to distill the freshest grape marc to obtain an even better grappa. The Bassano distillery strives to combine tradition and innovation, creating its grappas using both an ancient copper steam still—one of the oldest still in operation—and the more recent bain-marie stills, choosing how to process the pomace based on the type of grappa desired. It is precisely with this centuries-old steam still method that Sarpa Oro is produced. The fresh pomace of Merlot and Cabernet grapes is artisanally distilled in small batches and in a discontinuous cycle in steam boilers—loading them with the pomace and unloading the batch approximately every three hours—masterfully following the rhythms and needs of each boiler. The resulting grappa is then aged in small French oak barrels and stored for a long time in the distillery's underground cellars. The result is a simple yet refined barrique-aged grappa that captures the essence of the Bassano distillery.
