Description

What kind of oil is it

Poggio di Sotto Olio Extra Vergine d’Oliva is an organic Tuscan olive oil cold-extracted from a meticulous blend of Frantoio, Leccino, and Moraiolo olives. It displays a bright green hue with golden highlights, while the nose offers a clean, fruity aroma defined by distinct herbaceous notes of artichoke and subtle almond nuances. The palate is harmoniously structured, revealing vegetal hints of tomato and celery that lead to a perfectly balanced bitter and peppery finish. To best appreciate its vibrant character, it should be drizzled raw over hearty soups, fresh salads, bruschetta, and grilled meats.

Where does it come from

The origins of this oil lie in Poggi del Sasso, within the municipality of Cinigiano, Grosseto. Spanning a twenty-hectare estate, the olive groves are managed strictly according to organic agricultural practices. Established in 1989, Poggio di Sotto maintains a traceable, localised supply chain to capture the authentic identity of the Tuscan landscape. The unique soil and climate conditions impart a distinctively vegetal character to the oil, reflecting the classic sensory profile typical of this renowned hilly region.

How is it produced

Quality begins with a careful manual harvest, ensuring only the finest fruit is selected. Once gathered, the olives are quickly transported to the mill and crushed within hours. Extraction is carried out using a continuous-cycle cold process, a vital technique that maintains low temperatures to prevent any thermal degradation. This rapid mechanical method preserves the aromatic compounds, vibrant colour, and clean sensory profile. Consequently, the oil retains its deep aromatic freshness and a well-balanced, clean profile.
