How it is produced
The process begins with a careful manual harvest, followed by a rigorous selection of the bunches. After destemming and gentle pressing, the must ferments at a controlled temperature in steel for ten days. Malolactic fermentation occurs naturally in wooden barrels, followed by eighteen months of ageing in French oak barrels from Allier, both new and second passage.
