On the palate, it expresses vibrant freshness and a solid tannic structure, with a remarkably persistent finish. It is perfect when served between 16 and 18°C, after an hour of decanting, paired with meat dishes, game and mature cheeses.
Where it comes from
This wine originates from the renowned Bolgheri area, following the principles of organic and ethical viticulture promoted by Podere Sette. The vineyards, oriented from east to west, take root in medium-textured clay soils rich in stones. This privileged microclimate, combined with low yields, allows for the harvest of grapes with extraordinary aromatic concentration. The winery focuses on a fresh and elegant style, aiming to enhance the Bolgheri terroir and the integrity of the grape varieties cultivated in this exceptional area.
How it is produced
The grape harvest is carried out in several stages to ensure the optimal ripeness of each individual plot. The process continues with meticulous batch vinification, involving pump-overs and punch-downs designed to extract the best polyphenolic components. After malolactic fermentation, the wine matures in new and second-use barrels for about eighteen months. The final blend, the result of careful tastings, gives rise to a red wine that completes its ageing in wood, acquiring an extraordinary capacity for evolution over time.
