Planeta Spumante Carricante Metodo Classico Brut is an organic white wine made from Carricante grapes, an authentic expression of the Sicilian territory. Produced according to the Traditional Method, it reveals an elegant and vibrant profile. It is distinguished by a fine and persistent perlage, which precedes a floral bouquet with citrus and mineral notes. On the palate, it is smooth and easy-drinking, with hints of citron and passion fruit, finishing with a captivating touch of Mediterranean scrub.

Where it comes from

This sparkling wine originates in Castiglione di Sicilia, from vineyards situated at an altitude of 850 metres. The vines sink their roots into black volcanic sandy soils, in a volcanic environment surrounded by woods and rich in minerals. This territorial configuration gives the wine a marked freshness and a defined mineral character. The viticulture follows strict organic and sustainable practices, in full respect of the natural rhythms of the ecosystem.

How it is produced

Production begins with an early harvest to preserve the natural acidity of the grapes. After gentle pressing, the must ferments at a controlled temperature in stainless steel tanks. The prise de mousse, typical of the Traditional Method, involves ageing on the lees for twenty months. This prolonged period, followed by disgorgement, defines the elegance of the sip and gives the wine a harmonious and balanced Brut profile.

Wine making The grapes are crushed and destemmed, then placed in a gentle press. The clarified must is transferred and inoculated with yeast, fermenting at 15°C in stainless steel tanks. The resulting wine remains on the fine lees until January, with frequent stirring.
