Origin Côte de Nuits-Villages are produced in the Côte de Nuits in the north in the communes of Fixin and Brochon and in the south in Premeaux-Prissey, Comblanchien and Corgoloin
Soil composition Hard, very stony limestone on an even, gentle slope. At the base of the hillside, brown soils covered with accumulated silt.
Fermentation temperature Max 30 °C
Wine making Traditional vinification in temperature-controlled stainless steel vats over a period of around 3 weeks: cold prefermentary maceration at around 8 °C. Pigeage and pumping over to extract colour and structure. Fermentation at a peak temperature of around 30 °C. Post-fermentation maceration at 25 °C.
