The Sauvignon Blanc Mathias Riserva by Pfitscher is a still white wine with the Alto Adige designation. Made from Sauvignon Blanc grapes and matured on the lees in oak barrels and steel tanks, it reveals a bright straw yellow colour in the glass. The bouquet expresses mineral notes of flint and a clear, clean fruit, while on the palate it is deep and precise, characterised by an extremely persistent finish. Its structure makes it ideal for pairing with fish dishes, shellfish, risottos and pork, boasting a remarkable ability to evolve over time.
Where it comes from
This wine originates from the Pinzon-Gebach production area, in the municipality of Montagna. The Sauvignon Blanc vineyards are located at an altitude of five hundred metres, a privileged position that preserves the acidity and aromatic precision of the grapes. The wine's profile is shaped by soils rich in porphyry and calcareous sandy rock, which impart a distinct mineral character and a vertical, linear drinkability. The agronomic management allows for a wine that faithfully reflects the Alpine character of its place of origin.
How it is produced
Production begins with a six-hour maceration before pressing, aimed at extracting the maximum aromatic richness from the grape variety. The must ferments at a controlled temperature of 18°C, divided between small barrels and steel containers. Subsequently, the wine undergoes ageing on the lees for sixteen months in the same vessels, gaining breadth and consistency. Finally, bottle maturation allows it to achieve perfect gustatory balance before being released to the market.
