Description
What kind of spirit is this
Peyrot Liqueur Poire Williams & Cognac de Grande Champagne by Francois Peyrot is a structured and aromatic pear and Cognac liqueur from France, crafted from Williams pears and Grande Champagne Premier Cru Cognac. Produced through traditional Charentais double distillation in copper stills and a long maceration of the fruit, the spirit is aged in white oak barrels. This carefully balanced 30% ABV liqueur offers an intense amber colour enhanced by vibrant copper reflections. On the palate, a smooth, natural pear sweetness achieves a steady harmony with the light tannins and characteristic depth of the spirit, leaving a refined and lingering impression.
Where it comes from
Production of the spirit base takes place in France within the prestigious Grande Champagne region, at the Les Bergeronnettes estate in Gondeville. The fruit element is exclusively sourced from Williams pears originating from the Black Forest, meticulously harvested in late October at peak ripeness when the skins turn an amber-pink hue. This precise combination of raw materials yields a distinctive sensory profile where rich aromas of ripe pear and delicate floral touches mingle seamlessly with notes of noble wood.
How it is produced
A meticulous extraction process uses fourteen kilograms of fresh fruit for every 0.7 litres of liqueur to reach the desired concentration. The heart of the pear juice undergoes a four-week maceration to capture its purest aromas. Simultaneously, the base spirit is crafted using the classic Charentais double distillation in copper alembic stills. This component then matures for two years in white oak barrels, developing essential structural tannins. The final blending merges the highly concentrated fruit essence with the aged spirit, resulting in a balanced liqueur with deeply integrated flavours.
History and Curiosities
At the Les Bergeronnettes estate, François Peyrot masterfully blends Grande Champagne 1er Cru Cognac with the natural sweetness of late-harvested Williams pears. Remarkably, each bottle requires 14kg of fruit, which is gently macerated to capture its purest aromatic essence. Produced through traditional double distillation in copper stills, this elegant spirit is matured for two years in white oak barrels.
