Description

What kind of spirit is this

Peyrot Cognac X.O by François Peyrot is a Cognac 1er Cru de Cognac from the Grande Champagne region in France, distilled from Ugni Blanc, Folle Blanche, and Colombard grapes. Crafted in traditional copper stills and aged for over 25 years in oak barrels, it presents a deeply structured profile balancing intensity with a smooth character. The golden amber spirit introduces clear notes of fruit layered with vanilla and walnut, delivering a complex and silky mouthfeel with a persistent finish.

Where it comes from

Originating from Jarnac within the celebrated Grande Champagne zone of France, this Cognac reflects its specific terroir. Grapes are cultivated in the Les Bergeronnettes vineyard by a family that has been producing spirits for four generations. Agronomic practices follow integrated pest management, entirely excluding pesticides, chemical fertilisers, and industrial additives. This rigorous approach guarantees a pristine harvest and high-quality raw material. The character of the Grande Champagne region shapes a defined aromatic profile, showcasing impressive depth and flavour persistence.

How it is produced

The process begins with the vinification of white base wines, which are distilled in large copper stills to capture and concentrate essential aromatic compounds. The spirit then undergoes extensive maturation in oak barrels for more than twenty-five years. This prolonged resting phase builds the core framework while softening the palate. Ageing naturally develops the golden hue and deepens distinct flavours of fruit, vanilla, and walnut. At 40% alcohol by volume, the spirit achieves a harmonious balance, concluding with a controlled and persistent finish.

History and Heritage

Crafted by four generations of the Peyrot family, this exceptional 1er Cru de Cognac hails from the prestigious Grande Champagne region. The House cultivates the Les Bergeronnettes vineyards using integrated pest management, strictly avoiding chemical fertilisers. Skilfully distilled in traditional copper stills, the spirit is matured in oak barrels for over 25 years.

  • Start up year: 1956
Every day, since 1956, the Cognacs of the Maison François Peyrot have been made with the utmost dedication, the fruit of a 'savoir-faire' handed down from father to son over decades. They are the result of passion, hard work and perseverance. The 25 hectares of vines, where the grapes from which the Cognacs are harvested, are located in the town of Jarnac, in the 'Grande Champagne 1er Cru de Cognac', and are cultivated with respect for the environment, favouring quality over quantity. From the vineyard to the cellar, the step is short. Immersed in the half-light and humidity, the essence of wood impregnated with evaporated alcohol almost seems to be the 'perfume of angels': this is how the mystery is fulfilled, with the birth of unique and inimitable Cognacs, whose fragrances are mastered by the infallible skill of the 'maitre de chai', the cellar master.
