Description
Still red Roero Riserva, produced by Pelassa, 14% ABV, 2019 vintage. A wine born from a passion for Nebbiolo, carefully cultivated in the Roero hills. Fragrant aromas with fruity notes of strawberry, cherry, and spice, with an undertone of licorice. On the palate, it is dry, assertive, with balanced tannins and a full body. Aged for 30 months, 18 in barrels and tonneaux, and 12 in bottle. A wine that expresses the elegance and complexity of Nebbiolo, perfect for accompanying rich dishes.

| Wine making | Traditional vinification with fermentation for around 15 days at 26 °C. Destemming, soft crushing; the must is stirred with the dèlastage system to maximise extraction of colour and varietal aromas. Malolactic fermentation carried out. |
| Aging | After malolactic fermentation, the wine is placed in Slavonian and French oak casks and tonneaux with weekly topping up of the level and tasting trials to ensure the wine evolves as well as possible. It matures for 30 months, 18 of which in barrels and tonneaux and 12 in bottles. |
