How it is produced
The production of this Blanc de Noirs follows the strict rules of the Traditional Method, starting with careful vinification of only Pinot Noir grapes. After the prise de mousse, the wine rests patiently on the lees for a long ageing period of 32 months, a crucial step for developing structure and aromatic breadth. The final Extra Brut dosage is kept to a minimum, defining a taut and vertical profile. Before leaving the cellar, the Champagne benefits from a further post-disgorgement rest of ten months, ensuring perfect gustatory balance.
