Description

What kind of wine it is

The Champagne Paul Dangin Les Sels Mineraux Dosage Zero is produced using the Traditional Method from Chardonnay and Pinot Noir grapes. In the glass, it displays a pale straw yellow colour with silvery highlights and a fine, persistent perlage. On the nose, citrus notes emerge, along with white flowers, chalky minerality and brioche. The palate is taut, dry and saline, with a sharp freshness. Its dry structure makes it ideal to pair with oysters and goat's cheese, served at a temperature of 6-8 °C.

Where it comes from

Produced in the renowned Champagne region, in Celles-sur-Ource in the Côte des Bar, this wine comes from vineyards managed by Paul Dangin according to the principles of sustainable viticulture (Terra Vitis). The meticulous work in the vineyard allows for high-quality grapes, capable of imparting a distinct territorial character to the glass. The result is a marked mineral expression that defines the savoury and vertical character of the cuvée.

How it is produced

Production begins with manual harvesting, followed by the creation of a blend with reserve wines to balance intensity and finesse. The secondary fermentation follows the principles of the Traditional Method, enhancing the wine's complexity. The choice of zero dosage, with no added sugars, ensures an extremely dry profile. This technical choice enhances the wine's natural savouriness and absolute purity on the palate.

From this winery
  • Start up year: 1947
A family estate of great tradition par excellence, Paul Dangin & Fils is located in Celles‑sur‑Ource, a characterful village in the heart of the Côte des Bar. In 1947, Paul Dangin decided to continue the high‑quality work initiated in the 19th century by his father Joseph. He created the Paul Dangin & Fils brand and, above all, crafted a refined champagne based on the pursuit of balance between intensity and finesse.

Since then, generations have followed one another, passing down their love for the vine. Perfectly exposed on an exceptional mineral soil, our vineyard extends over roughly 50 hectares. This vast terroir hosts our Champagne grape varieties: Chardonnay, Pinot Noir and Pinot Blanc, the latter being a rare variety in the region. Harvesting is carried out exclusively by hand, allowing us to select the finest grape clusters for the production of our champagnes.

We take great care of our land, listed as a UNESCO World Heritage site, by practicing sustainable, environmentally respectful viticulture certified by Terra Vitis. With the same spirit of perfection, we blend our wines by combining different grape varieties, crus or reserve wines to create and perpetuate the Paul Dangin & Fils style.
