Few other wines in the world are able to evoke the myth of good drinking and entertainment like champagne. A product with which the French, proving once again to be able to team up at national level, are confirmed on all the most important world markets, fueling the myth of the bubble as an ideal complement of various moments, from the aperitif to the great and unforgettable celebration. Among the many Maison de Champagne that are found today in this wine region, from the great cellars of "Négociant Manipulant" to the smaller "Récoltant Manipulant", it is interesting to dwell on the company Paul Clouet, a cultivator and producer founded in Bouzy in 1907.

The Bouzy terroir is made up of vineyards extending for about 380 hectares, mostly located on the southern slope of the mountains surrounding Reims, characterized by a particularly chalky soil that is well suited to the cultivation of pinot noir. Right here the Paul Clouet winery, now owned by Maire-Thérèse, nephew of the founder Paul, has its roots: it covers about 6 hectares, divided among fifteen parcels all within the Grand Cru of Bouzy, where they are cultivated predominantly Pinot Noir, Pinot Meunier and, for about half a hectare, Chardonnay. The vines have an average age of about 25 years, and at each harvest 50,000 - 60,000 bottles are made, divided between six labels. Generation after generation, the Maison always guarantees a very high quality level, found in both the simplest and most direct wines, such as the Brut "Sélection" or the Rosé, and in the big labels, on all the "Prestige" cuvée and the vintage, as evidence of as every single phase of production is always followed with extreme care.

The bottles produced are very few, and very rarely do you come across products so intrinsically artisanal and expressive of a terroir: one more reason not to miss the opportunity to taste them.

Great for an elegant aperitif, where it is paired with various ingredients and preparations. Also perfect with steamed crustaceans, it is a must try with bread, butter and anchovies.
