What kind of wine it is
Mai Dire Mai by Pasqua is a still red wine, an expression of Valpolicella Superiore. Made from a blend of native grapes such as Corvina, Corvinone, Oseleta and Rondinella, it displays a structured aromatic profile. On the palate, it is warm and enveloped by very fine, rounded tannins. The tasting reveals a pleasant freshness and finishes with a long and persistent finish, with elegant spicy nuances.
Where it comes from
The grapes are grown in the Montevegro vineyard, in Val d’Illasi, at an altitude of 350 metres. The nature of the basaltic and calcareous soils imparts a marked mineral perception and a rigorous flavour profile to the wine. This terroir ensures excellent raw material, ideal for reflecting the local character. The qualities of this red have been awarded a score of ninety-one out of one hundred by Luca Maroni.
How it is produced
After manual harvesting and gentle pressing, fermentation at a controlled temperature preserves the aromatic clarity. Eighteen months of ageing in French oak barrels and barriques reveals notes of tobacco, cedar and undergrowth, followed by hints of morello cherry and coffee. To appreciate its balanced structure, defined by a pH of 3.44 and an acidity of 5.7 grams per litre, a two-hour decanting is recommended.
