The sparkling wine Mirafiore Alta Langa Blanc de Noir Brut is an organic Piedmontese excellence produced exclusively from Pinot Noir grapes using the Traditional Method. This expression of Alta Langa stands out for its fine and persistent perlage, which enhances its structure. The bouquet reveals aromas of white-fleshed fruit, enriched by notes of dried fruit and enveloping hints of bread crust. On the palate, the strength of the grape variety is balanced by a creamy mousse, offering a deep sip that fades into a fresh, savoury and long-lasting finish.
Where it comes from
The grapes for this Blanc de Noir come from the heart of Alta Langa, specifically from the slopes of Serralunga d’Alba. The vineyards are organically farmed at an altitude between two hundred and fifty and three hundred metres, with an eastern exposure that ensures gradual ripening. The vines sink their roots into white clay soils and calcareous sands, a mineral composition that gives the wine gustatory tension and aromatic precision. Mirafiore enhances these pedoclimatic characteristics to deliver the authentic identity of the territory in the glass.
How it is produced
The harvest ensures the integrity of the bunches, which undergo gentle pressing to extract only the free-run must. The must ferments in steel tanks at a controlled temperature and rests on the fine lees until the following spring. Following the strict stages of the Traditional Method, the secondary fermentation in the bottle begins, followed by a slow ageing on the lees for thirty-six months in cool environments. This long rest in the dark is essential to achieve the aromatic complexity and elegance that characterise the perlage.

Since 1878, Casa E. Di Mirafiore has been overlooking this UNESCO world heritage landscape with his estates in Barolo and Serralunga, the heart of one of the world's most famous wines: Barolo. It is also thanks to Casa E. Di Mirafiore that the world is aware of Barolo. It is in fact the first winery to export Barolo worldwide.
This estate is synonymous with quality, as it is home to two of the best Cru vineyards in the Langhe: Lazzarito (on one of Serralunga d'Alba's most magnificent slopes) and Paiagallo.

| Wine making | The grapes, harvested in small crates of about 20 kg, are immediately taken to the winery and placed directly into the presses for a gentle and delicate pressing, yielding about 50% of free-run must. The must is transferred into temperature-controlled tanks and left to settle for 24 hours for decantation, then racked to separate the coarse parts. The clear must ferments in steel tanks for about 20 days at 18–20 °C and matures on its lees until the following spring; this is followed by a second fermentation in the bottle (traditional method) and maturation on the lees for 36 months in a cool, dark environment. |
