Description
Organic Brut Classic Method sparkling wine from the Alta Langa region of Piedmont, 12% ABV, produced by Casa E. di Mirafiore. 0.75 L bottle, 2021 vintage. A Blanc de Noir made with Pinot Noir grapes, it tells the story of a winery founded in 1878 by Emanuele Alberto, Count of Mirafiore. The grapes, harvested in small crates of approximately 20 kg, are immediately brought to the winery and poured directly into the presses for a soft and delicate pressing. Aromas of white-fleshed fruit, dried fruit, and bread crust. On the palate, the typical structure of Pinot Noir is immediately perceived, enhanced by the pleasant creaminess of the foam. Long-lasting freshness and excellent flavor are the sensations that linger in the mouth and in the memory after tasting.

Since 1878, Casa E. Di Mirafiore has been overlooking this UNESCO world heritage landscape with his estates in Barolo and Serralunga, the heart of one of the world's most famous wines: Barolo. It is also thanks to Casa E. Di Mirafiore that the world is aware of Barolo. It is in fact the first winery to export Barolo worldwide.
This estate is synonymous with quality, as it is home to two of the best Cru vineyards in the Langhe: Lazzarito (on one of Serralunga d'Alba's most magnificent slopes) and Paiagallo.
In this town, Serralunga d'Alba, tradition is never forgotten. Even today, the style of Casa E. Mirafiore is defined by fermentation in concrete tanks and enormous Slavonian oak barrels for ageing. Read more

| Wine making | The grapes, harvested in small 20 kg crates, are immediately brought to the winery and poured directly into the presses for a soft and delicate crushing until about 50% yield in free-run must is obtained. This is then channelled into thermo-conditioned tanks, where it rests for 24 hours during which the coarser parts settle to the bottom of the tank and are separated from the clear part by decanting. At this point, the must begins its fermentation in steel tanks, which lasts about 20 days at temperatures between 18 and 20 °C, where it matures on its lees until the following spring. |
