Origin Castagneto Carducci (LI)
Harvest Between 3 and 15 September, the grapes were hand-picked into 15 kg crates in four passages according to the different parts of the vineyard. The bunches were carefully sorted in the field on a double sorting table, before and after destemming.
Wine making After a gentle crushing, vinification continued partly in stainless steel tanks and partly in truncated oak barrels. The vineyard origin guided the choice: each part of Masseto was vinified separately. After fermentation at temperatures around 25-28 °C, this was followed by maceration for around 10 5 days at 28 °C, for a total time in vats of 20-25 days. Malolactic fermentation took place in oak barrels (100% new).
