The Brut “Il Classico” is the fresh and innovative face of the LungoParma range. Alongside the traditional Charmat, there is room for a Metodo Classico with a more immediate and fragrant profile, aged on the lees for 30 months with a minimum of 6 months disgorgement.

Wine making | After soft pressing (maximum yield 40%), cold static clarification of the must is carried out. Fermentation of the must takes place in small stainless steel tanks at a controlled temperature that never exceeds 15 °C. Once the first fermentation is complete, the wine is racked into small stainless steel containers where it rests until bottling and re-fermentation in the bottle, according to the Classical method (better known as the Champenoise method). |
