A fairly recent history, but that certainly has brought out his protagonist: Dorino Livon, until it is one of the most established and best known wine producers of Friuli. A story, however, that has its origins in a passion and a family tradition: the love for their land, Friuli, in particular the extreme edge of which is the last bulwark of Italy to Europe Eastern: The eastern hills of Friuli and Collio. In 1964 he bought his first Dorino Livon hills of Collio and that, little by little, it adds others. It grows well year after year, the Farm Livon. At the same time develops the project to build its own winery and fully equipped with the most advanced technology. It dates from the early eighties, even following the entry in the company of two sons of Dorino Valneo and Tonino, the decision to diversify the production of wines that, while maintaining high quality, could develop two different strategic concepts. The Cru wines with limited production, made from vines with working is particularly suited to an agricultural and wine very classic wines selected to flourish in an important way, even as the quantity, in the mid / high range products. The principles underlying the organization and production results are obtained by reducing the amount per hectare, pruning shorter, the thickening of existing vineyards, planting new vineyards with a high number of plants per hectare and the creation of two wineries distinct. The cellar of "Masarotte" was used as a center of wine production throughout the production line Cru and aging in oak barrels of the same line of white wines, the cellar of "Vence", for the maturation in oak barrels, which is in barrels, of all red wines. The decade that follows is therefore characterized by the consolidation of what has been previously set and the assertion of Valneo and Tonino as natural recipients of the paternal inheritance. The Company's next strategic turning point occurs during the five years between 1992 to 1997 when, realizing that in order to remain competitive in a market whose scenarios were rapidly changing, Livon decide to purchase three farms, two of these, and Tenuta Villa Chiopris Roncalto were located in the Friuli region, while the farm is located Salcetino village in Tuscany in the Chianti Classico area. In 2001 the family Livon full range of production with the purchase of the Farm By saint, located in the municipality of Bevagna (PG) in the DOCG zone Montefalco. In 2008, after a long period of restructuring, the ancient Villa Inn Chiopris, regains its former glory. Harvest The harvest of selected grapes is carried out by hand using boxes and sent to the cellars where whole bunches are pressed.
Wine making The must from the pressing, characterized by the absence of rotation of the press and by the slow, gradual increase in pressure, is put in a stainless steel tank for a light cold settling and after 24 hours, 50% of the product is distributed in steel barrels and 50% in Hungarian oak barriques chosen for alcoholic fermentation.
