Still red from Beaujolais, France, 13.5% ABV, produced by Domaine du Chapitre. 100% Gamay, 2023 vintage. A Moulin à Vent, a Beaujolais cru, named after the iconic windmill that dominates the vineyards. The soil is granite with schist and veins of clay. Traditional vinification with maceration in open, temperature-controlled stainless steel tanks. Aged on the lees for 10 months in stainless steel. When young, fruity and floral notes dominate, such as ripe cherry and violet. With aging, the bouquet becomes spicier and more complex, with aromas of truffle and musk. A purplish-red color that will become a deep garnet with age. The finesse of its tannins and the persistence of its aromas offer an unparalleled pleasure.

Le Domaine du Chapitre se situe sur le lieu-dit « Clos du Chapitre » à la Chapelle de Guinchay. L'origine du nom de ce lieu-dit remonte au Moyen-Âge: le Domaine du Chapitre appartenait alors aux moines de l'Abbaye de Cluny.

Les moines, réunis en « Chapitres » religieux, étaient d'importants propriétaires dans la Côte Chalonnaise et la région de Mâcon. Sur leurs terres, les moines produisent d'abord le vin nécessaire à la célébration de la messe. Peu à peu, par un travail assidu, ils font progresser la viticulture, la qualité et les rendements. Les communautés peuvent alors vendre une partie de leur vin.

Au 15ème siècle, la qualité de leurs vins est reconnue dans toute l'Europe. Ils développent ainsi un savoir-faire viticole unique, transmis et amélioré de génération en génération. Leurs méthodes rigoureuses s'intéressent à tous les aspects de la viticulture (taille de la vigne, comparaison et sélection des cépages, conservation du vin, etc.). Le Domaine du Chapitre, fort de ce capital précieux, produit aujourd'hui des vins d'une qualité rare, fruit du travail de nombreuses générations.
