Description

What kind of wine it is

Chablis by Jean-Paul & Benoit Droin is a still white wine from Burgundy with an essential and refined profile. Made exclusively from Chardonnay grapes, it ferments in steel with the help of indigenous yeasts and undergoes malolactic fermentation to balance its vibrant freshness. On the nose, it expresses delicate floral aromas accompanied by a distinct mineral imprint. On the palate, it offers a clear and profound savouriness, making it an excellent companion for shellfish dishes and cheese selections.

Where it comes from

This wine originates from vineyards located in the north of Burgundy, cultivated on shallow soils rich in geological history. The subsoil is characterised by alternating grey marl and limestone, enriched by the famous Exogyra virgula fossils typical of the Kimmeridgian period. This particular matrix gives Chardonnay a unique gustatory tension. Its mineral texture emerges in a direct and authentic way, delivering in the glass the distinctive nuances of flint and oyster shell typical of the terroir.

How it is produced

The vinification process begins with pneumatic pressing followed by natural enzymatic decantation. Spontaneous fermentation takes place in steel tanks, as does the subsequent malolactic fermentation. The wine then matures in stainless steel tanks for a period of eight to ten months before the final blend, preserving a generous, taut and clean sip. Elegant and convivial, it releases lively notes of lemon that pair beautifully with aperitifs, fish terrines, delicate cured meats and seafood.

History and Curiosities

Born in the heart of Burgundy, the Chablis AOC by Jean-Paul & Benoit Droin expresses the purest essence of its terroir. The 35-year-old vines sink their roots into marl-limestone soils rich in marine fossils, which impart a refined minerality to the wine. Fermentation with indigenous yeasts in steel tanks preserves the integrity of the delicate floral aromas, accompanied by lively citrus notes and hints of seashell. This white from the 2024 vintage offers a savoury and generous sip: an excellence with remarkable ageing potential, perfect to pair with seafood.

From this winery
Domaine Jean-Paul e Benoît Droin is located in France, in the fascinating Chablis area, and covers about 25 hectares of land, with vineyards acquired by the family, which with passion and dedication has been dedicated to viticulture and the production of wines of excellence for over five hundred years. In 1999 Jean-Paul delegated the responsibility for winemaking to his son Benoît, an oenologist, who came to represent the fourteenth generation of Droin active in winemaking.

The domaine has several vineyards within the territories of the denominations of Petit Chablis, Chablis and the renowned Premier Cru and Grand Cru, all characterized by soils particularly rich in limestone and marl, which give the wine a marked minerality.

It all starts with the work between the rows, carried out with the utmost respect for the balance of environment, nature, ecosystem and biodiversity. Following scrupulously precise agronomic rules, we arrive at harvesting, harvest after harvest, genuine and healthy grapes, rich and concentrated in every little organoleptic nuance. In order to favour the speed of transport and the perfect integrity of the bunches, the winery is located on the lower part of the most important vineyard of the company, where it has specially prepared a modern reception of the grapes, followed by an equally technological and careful vinification.

After arriving in the cellar, the bunches are then pneumatically pressed to allow a gradual and continuous release of the precious juice, which is then fermented at a controlled temperature. The ageing process is followed by resting in stainless steel tanks for the Chablis and Petit Chablis, while the Premier Cru and Grand Cru are left to mature in wooden barrels located in the cellars of the Domaine. The entire process ends after about ten months of aging, after which the wines are filtered, bottled and marketed. In this way, labels of the highest level come to life: unsurpassed wines on the French stage in the Chablis region.
