The Chablis 1er Cru Montmains by Jean-Paul & Benoit Droin is a white wine from Burgundy that represents the pure expression of Chardonnay. Its sensory profile combines richness of flavour, lively freshness and a pronounced mineral character. On the nose and palate, it reveals clear notes of yellow fruits and apricot, intertwined with floral nuances, hazelnut and almond. As it evolves over time, the bouquet is enriched with complex brioche sensations, making it ideal for pairing with fine fish and white meats.

Where it comes from

The grapes come from Montmains, on south-east facing slopes within the Chablis area. Here, the vineyards take root in deep soils, where substantial Kimmeridgian marl merges with clay. This geological matrix gives the wine a full texture and a pleasant roundness of flavour, enhancing its sense of place. Vineyard management follows the principles of integrated pest management, keeping the soils healthy through regular cultivation.

How it is produced

After pneumatic pressing, the must undergoes natural enzymatic settling. Fermentation starts spontaneously thanks to indigenous yeasts, taking place in both stainless steel tanks and barrels to balance tension and volume. This is followed by systematic malolactic fermentation and ageing for about ten months before creating the final blend. A light filtration precedes bottling, ensuring a structured, concentrated white wine with clear aromatic definition.

Domaine Jean-Paul e Benoît Droin is located in France, in the fascinating Chablis area, and covers about 25 hectares of land, with vineyards acquired by the family, which with passion and dedication has been dedicated to viticulture and the production of wines of excellence for over five hundred years. In 1999 Jean-Paul delegated the responsibility for winemaking to his son Benoît, an oenologist, who came to represent the fourteenth generation of Droin active in winemaking.

The domaine has several vineyards within the territories of the denominations of Petit Chablis, Chablis and the renowned Premier Cru and Grand Cru, all characterized by soils particularly rich in limestone and marl, which give the wine a marked minerality.

It all starts with the work between the rows, carried out with the utmost respect for the balance of environment, nature, ecosystem and biodiversity. Following scrupulously precise agronomic rules, we arrive at harvesting, harvest after harvest, genuine and healthy grapes, rich and concentrated in every little organoleptic nuance. In order to favour the speed of transport and the perfect integrity of the bunches, the winery is located on the lower part of the most important vineyard of the company, where it has specially prepared a modern reception of the grapes, followed by an equally technological and careful vinification.

After arriving in the cellar, the bunches are then pneumatically pressed to allow a gradual and continuous release of the precious juice, which is then fermented at a controlled temperature. The ageing process is followed by resting in stainless steel tanks for the Chablis and Petit Chablis, while the Premier Cru and Grand Cru are left to mature in wooden barrels located in the cellars of the Domaine. The entire process ends after about ten months of aging, after which the wines are filtered, bottled and marketed. In this way, labels of the highest level come to life: unsurpassed wines on the French stage in the Chablis region.

This wine elegantly accompanies poultry, veal and fine fish. When young, its freshness enhances white meats in sauce without the need for decanting. After around ten years of ageing, the pronounced minerality of Chablis Premier Cru also beautifully supports pan-seared foie gras, offering a unique sensory experience.
