Description
Still organic white wine, 12.5% ABV, produced in Burgundy by Jean Fournier. Blend: 80% Chardonnay, 8% Chardonnay Rosé, 8% Pinot Blanc, 4% Pinot Beurot. 0.75 L bottle, 2023 vintage. A wine born from the passion of the Fournier family, present in Marsannay since the 17th century. The grapes are hand-picked and carefully selected, vinified without added yeasts, and aged in oak barrels for 12 months. A wine that expresses the finesse of the Burgundian terroir.

The Fournier family has been present in Marsannay since the 17th century, with writings from the reign of Louis XIII already attesting to the presence of a Fournier in the village.
It was much later, in 1962, that Jean Fournier settled as a winegrower in his native village. Today, his son, Laurent, is at the head of an exploitation which covers 22,5 hectares on the vineyards of the Côte de Nuits and the Côte de Beaune. Read more

| Harvest | ed by hand in small 15 kg crates, with rigorous sorting in the cellar. |
| Wine making | The grapes are crushed, then pressed for a long time (3 to 5 hours) without any additives (no sulphur, enzymes or yeasts). The juice is lightly decanted cold for 12-24 hours, then fermented under the action of indigenous yeasts in barrels. |
| Aging | Maturation in 600-litre barrels (demi-muid, with 10% new wood), without stirring, for 12 months, then 4 to 6 months in stainless steel tanks. |
