What kind of wine it is
Istine Chianti Classico Gran Selezione Vigna Cavarchione is an organic red wine with a dry and structured palate, a true expression of the Gaiole in Chianti region. Made from Sangiovese grapes, it reveals a ruby colour and a complex, layered aromatic profile. Its elegance pairs superbly with game dishes, roasts and flavourful red meats. It is also ideal for balancing the savouriness of mature cheeses or for harmoniously accompanying rich first courses.
Where it comes from
This label originates from the Cavarchione vineyard, located near the historic village of Vertine, within the Chianti Classico area. The vines grow at an altitude of 420 metres, benefiting from an east and south-east exposure that ensures optimal ripening. The plants are trained using the Guyot system under biodynamic agriculture. The soils are rich in stones, characterised by alternating marl limestones and a predominance of Galestro, a matrix that imparts a distinct mineral character to the wine.
How it is produced
After manual harvesting, vinification takes place in concrete vats at a controlled temperature. The must undergoes a submerged cap maceration for about forty-five days, allowing for a slow and gradual extraction of the finest components. Once malolactic fermentation is completed, also in concrete, the wine gains elegance by resting for fifteen months in fine Austrian oak barrels. The process concludes with a prolonged bottle ageing, essential to ensure stability and the fullest expression of the Gran Selezione.

The 2009 harvest and the first 3000 bottles of Chianti Classico concretely represent what has always been the great passion for wine, thus integrating and completing the family business.
The commitment for the future is to evolve and grow, while remaining faithful to the traditions and to our territory, trying to enhance as much as possible what nature is offering us and the viticultural peculiarities of the highest lands of the Chianti region.
