I Mori by Ippolito 1845 is a red wine born from the union of Gaglioppo and Cabernet Sauvignon. This enveloping blend presents an intense ruby colour enriched with violet reflections. On the nose, it expresses a complex bouquet, characterised by notes of red fruits, vanilla and delicate balsamic hints. On the palate, it reveals a great structure, resulting warm and smooth. The refined tannins ensure a persistent finish, ideal for accompanying roasts and mature cheeses.

Where it comes from

This wine is produced in Cirò Marina, at the heart of the wine-growing region of Calabria. The production area enjoys ideal conditions that allow Gaglioppo to express an excellent territorial identity. The encounter with Cabernet Sauvignon creates a harmonious and balanced flavour profile. This well-defined geographical origin guarantees a clear recognisability, offering a sip that combines olfactory intensity and elegance on the palate.

How it is produced

The process begins in October with a careful manual harvest. Fermentation takes place in stainless steel tanks at a controlled temperature to achieve precise extraction of aromas and colours. Ageing takes place in small French oak barrels, which impart elegant spicy notes to the wine. The subsequent final rest consolidates its aromatic complexity, resulting in a wine with a bold character, fully compatible with a vegan diet.

It was in 1845 when Vincenzo Ippolito embellished his initials on the country house in the Cirò marina between vineyards, olive groves and orange trees. In a very varied agriculture, the vines begin to play an important role, although the wine consumption was strictly local. With more than 160 years of history, Ippolito Winery is the oldest winery in Calabria. Located in the historic center of Cirò Marina, the heart of Calabrian viticulture, the farm includes an estate of over 100 hectares, distributed between gentle hills and sunny plains close to the Ionian Sea, located in the classical Cirò area. The corporate mission has always been the recovery and valorisation of native grape varieties such as Gaglioppo, White Greek, Calabrian and lastly the Sheep. Through constant research, the use of innovative techniques, direct control of all production processes, we seek in our wines elegance, exclusivity and identity with their own territory.
