Where it comes from
The grapes are grown in the municipality of Salorno, in South Tyrol, cultivated on slopes situated between 350 and 550 metres above sea level. The vineyards are trained using pergola and Guyot systems, with careful management aimed at maintaining controlled yields to preserve the excellence of the raw material. This pedoclimatic environment supports the natural freshness of the grapes, while vineyard management follows the principles of sustainable viticulture.
How it is produced
After harvesting, the grapes undergo fermentation in steel to preserve the vibrancy and primary aromatic integrity of the grape variety. The process continues with twelve months of ageing in barrels, an essential step to impart roundness and integrate spicy notes without overpowering the fruit. This careful cellar process defines a versatile profile at the table. It pairs perfectly with starters and white or red meats, and also finds excellent harmony with delicate fish, pork dishes and cheeses.
