The estate's roots date back to 1842, while since 2009, in-house vinification has allowed for a direct enhancement of the terroir, delivering a dry, vertical and faithful expression of Pinot Meunier grapes.
How it is produced
The vineyard management follows strict principles of organic and sustainable agriculture, respecting the balance of the vines. The processing of the grapes avoids the use of new wood to highlight the absolute freshness of the base wines. The secondary fermentation takes place following the Traditional Method, accompanied by a long period on the lees which refines the texture of the bubbles. The Extra Brut dosage at disgorgement finally ensures a crisp, taut and elegant sip.

Previous generations have always chosen to rely on a cooperative for the entire process of wine production, since Guillaume's entry into the company, the wine-making process has been carried out within the company, producing a limited quantity every year, but always in slight growth. None new wood is used during processing so as not to alter the character of the wine.
Les Pres Dieu is the first cuvée made by Guillaume and worked in two wooden barrels. The production is only 615 bottles. The dosage of 4.5 g/l has been established; this allows the freshness of the sandy terroir of Vrigny to be maintained and the slight oxidation to be balanced. which gives this cuvée its complexity.
