Where it comes from
This oenological expression originates from the vineyards of Lombardy, in the heart of Oltrepò Pavese Bonarda. The vines are cultivated using the Guyot training system on medium-textured soils, characterised by a significant presence of calcareous marl. This specific soil composition gives the grapes an intense aromatic profile and contributes to the defined flavour structure of the wine. How it is produced
The production process begins with a rigorous manual harvest. The bunches are subjected to crushing and destemming and a pre-fermentation maceration to extract colour and aromatic precursors. Fermentation takes place at a controlled temperature with selected yeasts, followed by vinification in stainless steel tanks. To achieve the characteristic effervescence, the wine undergoes a refermentation in an autoclave maintained at a constant temperature of sixteen degrees. Throughout the entire production cycle, the product is monitored with careful analytical laboratory controls to preserve the integrity of its organoleptic profile.
