A Mi-Chemin is a rigorous Champagne Grand Cru Blanc de Blancs Extra Brut by Girard Bonnet. Produced exclusively from Chardonnay grapes, this wine is crafted using the Traditional Method, ensuring a pure and highly precise profile. The palate is taut and dry, supported by pronounced minerality and a vibrant yet balanced acidity. On the nose, it offers delicate notes of white flowers, finishing with a refreshingly crisp finale. It is ideal for pairing with fish dishes, shellfish, and cheeses.
Where does it come from
This wine is a faithful expression of the Côte des Blancs, made from grapes grown in the prestigious Grand Cru villages of Le Mesnil-sur-Oger and Oger. The vineyards are rooted in clay-limestone and rendzina soils, which rest on a deep layer of Campanian chalk. This geological foundation imparts a marked savoury character and dryness to the Champagne. The terroir translates into a linear sip, capable of conveying its territorial identity through crystalline freshness.
How is it produced
Fermentation of the must occurs thanks to the action of indigenous yeasts, preserving the purity of the Chardonnay. Vinification takes place partly in barrels and partly in stainless steel tanks, to balance structure and elegance. The creation of the cuvée involves a careful blend with reserve wines, followed by secondary fermentation in the bottle according to the Traditional Method. The subsequent ageing on the lees consolidates the Extra Brut profile, giving the palate that taut and clean sensation which defines its essential style.

This prestigious label follows the principles of the traditional method, using indigenous yeasts for meticulous vinification, carried out between oak barrels and stainless steel tanks. Ageing on the lees and reserve wines give this champagne its great minerality and notes of white flowers.

The Girard estate, a cooperative grower from Mesnil sur Oger; and the Bonnet estate, a grower maker from Oger who produced approximately 140,000 bottles in the 1980s under the name of Champagne F. Bonnet Père et Fils. Unfortunately, the latter was extinguished in 1988 and the vineyards were leased.
The routes of the two estates were destined to meet in the next generation, with the union of Philippe Girard and Dominique Bonnet.
Some years after the lease expired, Paul Girard, the son of Philippe and Dominique who thus embodies both the Girard and the Bonnet families, decided to merge the two vineyards in order to embark on the adventure of creating a grower-maker brand in honour of his origins.
