Description
Gaja, Ca' Marcanda and Pieve Santa Restituta grappas are produced at the Distilleria Cooperativa del Barbaresco founded in 1980. They are produced from the distillation of fresh pomace: the distillation period starts around mid-September and ends in November.

Production technique | The distillation of the Nebbiolo marc, dripping with wine, takes place in a state-of-the-art plant in order to preserve all the varietal aromas and fragrances intact. The still used is of the discontinuous, steel type, and inside it the marc is passed through a jet of steam, which carries the alcoholic vapours with it. These, subsequently drawn into the distillation column, produce the distillate, which originally has an alcohol content of 70 - 75 °C. |
Aging | The grappa is then refined in small barrels (225 litres) of four different types of wood: acacia, juniper, oak and birch. After one year of ageing, distilled water is added until it reaches the alcohol content indicated on the label. |
