What kind of olive oil is this?

Laudemio Frescobaldi is a Tuscan extra virgin olive oil produced directly from olives using solely mechanical processes. Boasting a vibrant emerald green colour, it reveals an intensely fresh profile with aromas of freshly picked green olives, mown grass, thistle, and artichoke. On the palate, the oil is characterful and structured, delivering pleasantly bitter and peppery notes that remain harmoniously balanced throughout the tasting. Designed to elevate Mediterranean cuisine, this oil is best enjoyed raw to finish delicate starters, fresh vegetable dishes, authentic pastas, and pizzas.

Where it comes from

The olives are cultivated across more than three hundred hectares of Tuscan olive groves owned by Frescobaldi. Situated between 200 and 500 metres above sea level, the estate benefits from a favourable climate with mild winters and well-distributed spring rainfall. The early autumn period provides ideal temperatures alongside significant day and night temperature shifts. These specific environmental conditions stimulate the synthesis of phenolic compounds, resulting in an oil with pronounced freshness, deep aromatic intensity, and a clear pungency.

How it is produced

Production relies on a rigorous early autumn harvest, completed before the fruit fully ripens to capture maximum aromatic freshness and a vivid green colour. To protect the integrity of the olives, they are transferred immediately and pressed within a few hours at the estate’s mill at Castello Nipozzano. Extraction is carried out entirely through mechanical processes, preserving the authentic character of the fruit. Following production, each batch undergoes strict organoleptic selection to ensure only oil with clean vegetal notes and an optimal balance of bitterness becomes Laudemio Frescobaldi.
