What kind of wine it is
Franz Haas Pinot Nero Ponkler is a still red wine from Alto Adige. Made from Pinot Noir grapes, it reveals a deep and concentrated aromatic profile, characterised by elegant notes of wild berries, star anise and leather. On the palate, it displays great structure and remarkable fullness, with evolving tannins and distinct hints of cinchona bark. Its persistent finish makes it ideal for accompanying dishes with bold flavours. It pairs perfectly with game and braised venison, and also harmonises well with grilled red meats, poultry and mature cheeses.
Where it comes from
The grapes grow in the mountainous regions of Alto Adige, at an altitude of seven hundred and fifty metres. The rows, with optimal south and south-west exposure, take root in soils composed mainly of eroded porphyry, which defines the wine’s firm and mineral texture. The Guyot vine training system involves high planting density and very low yields. The careful selection of French clones, ideal for the high hillside climate, ensures the harvest of bunches of excellent quality, capable of expressing a pronounced aromatic concentration.
How it is produced
Vinification takes place in open vats, keeping the must in direct contact with the skins. During this phase, constant punching down and pumping over operations maximise the extraction of colouring and aromatic substances. The wine is then transferred from steel to barrels, where it completes malolactic fermentation and rests for fifteen months. A prolonged final ageing consolidates its exceptional balance. To fully appreciate its complexity, it is recommended to decant for one hour, serving it at a temperature between sixteen and eighteen degrees.
