Description
What kind of wine it is
L’Âme de la Terre by Francoise Bedel is a Champagne with an extra dry dosage, created from a biodynamic blend of Chardonnay, Pinot Noir and Pinot Meunier. This wine stands out for its winy, rich and complex flavour profile, where the structure is powerful yet always balanced by a measured elegance. The prise de mousse, carried out according to the Traditional Method, ensures a profound sensory continuity, ideal for enhancing the characteristics of its place of origin.
Where it comes from
The grapes come from vineyards located on both sides of the Marne, between the villages of Crouttes-sur-Marne, Nanteuil-sur-Marne, Charly-sur-Marne and Villiers-Saint-Denis, in the heart of Champagne. The soils combine clay, silt and marl on a limestone base, a composition that gives the wine remarkable breadth and a defined structure. Francoise Bedel cultivates old biodynamic vines aged between thirty and sixty years, bringing together plots with different subsoils. This notable maturity of the plants encourages concentrated yields, ensuring deep aromas and a genuine expression of the terroir.
How it is produced
The process begins with a blind selection of the base wines, designed to enhance the absolute potential of the harvest. After the initial vinification, the secondary fermentation takes place in the bottle according to the Traditional Method, followed by ageing on the lees for fourteen years. This prolonged rest greatly increases the consistency and aromatic depth before disgorgement. On the palate, its intense yet smooth personality offers ideal pairings with sauced dishes, refined starters, white meats, poultry, fish and cheeses.
