Franck Pascal presents Champagne Sérénité Extra Brut, a rigorous and pure expression of the French terroir. This Traditional Method zero dosage wine is crafted from a meticulous blend of Pinot Meunier and Chardonnay grapes, cultivated according to organic and biodynamic principles. The absence of added sugars defines a distinctly dry profile, combining great precision on the palate with pronounced mineral tension. A wine that reflects a natural approach, made without added sulphites to preserve the integrity of the fruit.

Where it comes from

The grapes come from the vineyards of Baslieux-sous-Châtillon, located in the heart of the Marne Valley. In this specific area of the Champagne region, the vines grow on chalky and limestone soils, rich in minerals that give the wine its characteristic savouriness. The old vines, over forty years old, ensure modest yields but great aromatic concentration, guaranteeing optimal ripeness. This strong sense of place is clearly perceived in the glass, where the unmistakable chalky notes frame an extremely clean finish, true to its landscape of origin.

How it is produced

Vinification strictly follows the Traditional Method, involving a long maturation on the lees which greatly enhances the structure and aromatic breadth. On the nose, it opens with a deep array of ripe fruits, including gooseberry, raspberries, peach and quince, accompanied by intriguing toasted notes of coffee. On the palate, the texture is rounded and completely free of harshness, finishing with a persistent aftertaste marked by hints of red fruit jam, pepper and a delicate touch of walnut. This balance makes it ideal for pairing with sushi and fried fish, while also elegantly complementing selections of cheese and cured meats.
