Foss Marai Prosecco Valdobbiadene Extra Dry is a wine born in the heart of the excellent wine-growing area in the province of Treviso. Its denomination, in fact, is DOCG Valdobbiadene Prosecco. The territory is among the most evocative. Concentric hills wind along the Prosecco production route. The terroir is among the most interesting of all. Strips of land reclaimed from the hillside to plant Glera vines, used to produce the famous wine known throughout the world. The winemakers perform a heroic work in protecting the vineyard. The soils are a mix of limestone and clay. Thanks to these characteristics, they are able to absorb water, preventing annoying stagnation that could cause the vines to rot. The Foss Marai winery's training systems fully comply with the specifications. The plants must not be forced in any way, and intensive cultivation systems cannot be used. Due to its unique characteristics, the Conegliano-Valdobbiadene area is a candidate for UNESCO World Heritage status. The grape variety used to produce Foss Marai Prosecco Valdobbiadene Extra Dry is 100% Glera. It was once called Prosecco, as it came from a locality in Friuli Venezia Giulia. The name Glera was chosen to give it an identity linked to the Valdobbiadene region. The grapes are harvested manually, using crates to avoid premature damage. Once they arrive at the cellar, the grapes undergo a soft pressing process to extract the free-run must. This is followed by decanting the must and clarification. The clear part is inoculated with selected yeasts and placed in an autoclave for the secondary fermentation. This is followed by bottling and release onto the market.
